chore: bump SDK to 2.1.0 and dapp-kit to 2.3.3

Summary

• Bump @vechain/sdk-core and @vechain/sdk-network from 2.0.7 to 2.1.0 (root + cross-app-connect).
• Bump @vechain/dapp-kit-react from 2.3.2 to 2.3.3 (dependency + peer).
• Lockfile now resolves a single SDK 2.1.0 / dapp-kit 2.3.3 tree (no leftover 2.0.x SDK).

This is the vechain-kit step of the Interstellar / EIP-7825 republish. dapp-kit 2.3.3 is already on npm (release, publish run).

Kit package version is left at 2.12.1 — bump it in the usual prepare:release PR after this merges.

Test plan

• yarn kit:typecheck against SDK 2.1.0
• yarn kit:build
• Preview / smoke connect + send on testnet after merge (fork-gated gas cap should be a no-op until Interstellar)
