Properly document the --exclude option #5246

Expected behavior

Have documentation that allows a relatively experienced engineer know what kinds of patterns are supported without spending hours with trial and error.

Actual behavior

Farcically short and incomplete documentation. There are several issues in the repository regarding this - some for bugs and some for the woeful lack of features. At the very least it should have a minimal set of documentation and examples. It should also make clear what kinds of things are NOT supported, like matching directory names (rather than filenames).

    Yes, this section is very short:
    https://docs.min.io/enterprise/aistor-object-store/reference/cli/mc-mirror/#minio-wildcard-matching
    After trying for 10 minutes, made it working. With help of Google search, matching dir names are working, you should use like that:
    --exclude dirname/*
    where dirname relative to root of mirroring.
    I am not sure how to submit PR with changes to docs.
