The docker setup guide has an error

I just used the guide to get the docker-compose file. I just wanted to mention that after installation I could not access the container, because all configs internally forward to port 80, but the service starts on 8080 inside the container. I read the nginx config during troubleshooting. Someone should update this.

The issue itself was the latest tag on the wrong image and not the docs. I created a fix PR to the mainsail repo: mainsail-crew/mainsail#2656
