docs: update Discord invite links to current working link

Updated broken Discord invite link and migrated all GitHub organization references from yeagerai to genlayerlabs:

Discord Link Fix:

• README.md: Changed expired Discord invite discord.gg/VpfmXEMN66 → discord.gg/qjCU4AWnKE (1 occurrence)

GitHub Organization Migration:

• README.md: Updated Twitter badge URL, GitHub star chart URLs, and CONTRIBUTING link (4 occurrences)
• CONTRIBUTING.md: Updated issue links, git clone command, and docs repository link (5 occurrences)
• LICENSE: Updated copyright from "YeagerAI LLC" to "GenLayer Labs"

Why

1. Broken Discord link: The old invite link showed "Invite Invalid" error when clicked, preventing users from joining the community
2. Organization rebranding: GitHub organization migrated from yeagerai to genlayerlabs, requiring updates to all repository links and references

Testing done

• Manually verified old Discord link (discord.gg/VpfmXEMN66) returns "Invite Invalid" error
• Manually verified new Discord link (discord.gg/qjCU4AWnKE) successfully opens GenLayer Discord server
• Verified GitHub organization is now genlayerlabs (repository accessible at https://github.com/genlayerlabs/genlayer-js)

Decisions made

• CONTRIBUTING.md Discord links preserved: These files use discord.gg/8Jm4v89VAu which is a different but valid invite link to the same server - intentionally NOT changed per user feedback
• CHANGELOG.md not modified: Historical commit URLs contain yeagerai references but these are correct as they point to historical commits
• Copyright entity updated: Changed from "YeagerAI LLC" to "GenLayer Labs" to reflect organizational transition
