Updated mimicry documentation to include Hoodi as a supported network for the bootstrapRpcUrl configuration option, which was omitted when Hoodi network support (560048) was added to the rpcbootstrap package.
Introduced by commit 5fab83e (@samcm, #815)
Without this update, users attempting to configure mimicry with a Hoodi network RPC endpoint would not know that the network is supported, potentially leading them to believe they need to use a different configuration approach or that Hoodi is unsupported.
