fix(SOL-417): stackone-platform - update stale StackOne docs links and v2 accounts

Summary

StackOne restructured docs.stackone.com, which broke links in the stackone-platform skill. /overview/authentication and /overview/rate-limits return 404. In references/api-categories.md, the Ticketing and Messaging category pages return 404, and the HRIS, ATS, CRM, LMS and Accounting pages redirect to /legacy-unified-apis/introduction, so an agent following them lands in legacy documentation. The accounts guidance also pointed at the v1 accounts reference, which is no longer listed in llms.txt.

These are targeted fixes. The skill keeps its structure and its actionable guidance (Basic auth example, trailing-colon tip, backoff for 429), all checked against the current Authentication and Rate Limiting pages. Facts the docs already hold (key format, when x-account-id is needed, what a linked account is, account fields and status values) are replaced with links to those pages.

Changes

• Dead links: authentication and rate limits point to platform-api/authentication and platform-api/rate-limiting.
• Accounts on v2: the endpoints are GET /v2/accounts and GET /v2/accounts/{id}, and the reference link points to the v2 List Accounts page. The copied list of account fields and status values is removed. It had drifted (v2 renamed provider to connector and origin_owner_id to owner_id), so the skill now sends the agent to the reference for them.
• Key details: the copied key facts are replaced with links to API Keys, Authentication and Core Concepts. The linked-accounts example also points to the API Keys page for creating a key.
• Connector categories: the category table in api-categories.md is replaced with a pointer to the connectors page, which tags each connector with its categories. The Platform API table uses the v2 accounts endpoints, and the file notes that the "Platform API" section of llms.txt lists every reference page.
• Durable links: appending .md to a URL that doesn't already end in .md returns the page as markdown, and llms.txt is fetched as is. If a URL 404s, the agent searches llms.txt by topic. If the docs don't cover the question, the agent says so and suggests contacting StackOne support.
• Key URLs: adds Webhooks (connect/webhooks), and the bare docs URL points to the Introduction page.
• Skill metadata.version bumped from 2.0 to 2.1. The plugin version is left to release-please.
