[REFACTOR] One docs site for all Fhenix products

What

This PR changes the CoFHE docs into one docs site for all Fhenix products.

• / is a new landing page with one card per product.
• The CoFHE docs move to /cofhe/.... The page content does not change.
• /wallet is a new Wallet Module product with a "Coming soon" page.

Why

Fhenix has more than one product now. Each product needs docs on one domain, docs.fhenix.io. Each product must also run its own CI.

Main changes

1. Move CoFHE under cofhe/. All 115 pages and images move with git mv, so history stays. A script rewrites every internal link to /cofhe/.... Old paths redirect: /client-sdk/... goes to /cofhe/client-sdk/....
2. Landing page and Wallet product. docs.json uses navigation.products.
3. Shared and per-product rules. Root AGENTS.md and STYLE.md keep the shared rules. CoFHE facts, terms, and diagram rules move to cofhe/AGENTS.md and cofhe/STYLE-cofhe.md. .mintignore keeps these files off the site.
4. CI per product. sample-compile and docs-versions run only on cofhe/**. Their scripts move to cofhe/scripts/. docs-style and mint-check still run on every product.
5. Style fixes. This PR moves every page, so the style check now reads all of them. It found 7 old em dashes in 2 pages. They are replaced with a colon or a comma. The meaning does not change.

Checks

• The CoFHE navigation is the same as today. All 25 old redirects stay.

• 111 of 115 pages render the same text and title as the live site. In 2 pages, the em-dash fixes are the only change. In 2 more pages, Mintlify's newer renderer formats code in accordion titles. The source of those 2 pages did not change.

• mint validate and mint broken-links --check-anchors --check-redirects pass.

• All 115 pages exist at their new paths.

• No old-form internal link is left.

• The structure linter reports 0 errors.

• check-versions reports 0 mismatches.

After merge (in this order)

Do not merge before steps 1 to 3 are done.

1. Add docs.fhenix.io as a custom domain in Mintlify.
2. DNS: point docs.fhenix.io to Mintlify.
3. Rename the repo to fhenix-docs.
4. Merge.
5. Add 301 rules: cofhe-docs.fhenix.zone/* to docs.fhenix.io/cofhe/*, and docs.fhenix.zone/* to docs.fhenix.io/*.
6. Check all 115 old URLs.

Review

The diff is mostly renames. To see the real changes, use git diff -M origin/main...HEAD --stat and review commit by commit. There is one commit per milestone, plus the style fixes.
