Update Our Branch with new API changes

Hey both — quick update on the PR.

I’ve pushed the latest changes to align with FCR and the new data model.

The Vercel REST functions for tokens/lanes are updated.
The endpoint docs and examples are in the README
The temporary GraphQL proxy is also updated and running - The proxy now surfaces the new fields including a json -poolInfo field keys:finalityDepth,finalitySafe,hook,thresholdAmount

On the REST side, these are exposed through the new model (pool.finality, pool.ccv, and lane-level verifiers/rate limits).

AC:

• Merge the API into our branch
• Ensure the app works correctly (spend some time to go through the CCIP flow)
