Rename project from coord to smalltalk

[schickling-assistant]

The project should be renamed from coord to smalltalk.

Nathan agreed with this direction.

Acceptance criteria:

• User-facing docs, package/project references, and CLI/API wording use smalltalk where the project name is intended.
• Repository/package rename and compatibility concerns are handled explicitly, including any migration notes needed for existing users.
