Simulator and Demo modes are work in progress.

I opened a PR for this here: #229

Summary: the fix separates the OCPP 1.6 runtime-supported profile list from the profile list accepted by ocpp-manager when creating the default configuration. It keeps Reservation and RemoteTrigger advertised through SupportedFeatureProfiles, but avoids passing unsupported profiles into DefaultConfigurationFromProfiles.

Verification included focused Docker-based Go tests for the config/startup profile path.
